Cream Powder Puffs

These delicious treats rarely last long in our house. Their soft & delicate sponge-like qualities contrast beautifully with the sweet cream layer. You could also add some Jam or sliced Strawberries to the centre for an extra gorgeous afternoon teatime treat.

ingredients
2 large Eggs
1/2 Cup Self Raising Flour
1/2 Cup Cornflour
1/2 Cup Caster Sugar
pinch of Salt
sweetened Whipped Cream
Icing Sugar for dusting

method
Preheat you oven to 180°C or 350°F Grease baking trays and place near the oven to warm.

Beat Eggs and Salt in a bowl until frothy. While beating, gradually add the Sugar. Continue beating this for about 10mins.

Sift the Flour and Cornflour together, 3 times. Fold the Flour into the Egg mix, gently. Place teaspoonfuls of this mix onto the warmed, greased trays, leaving about 5cm room for spreading.

Bake in the oven for about 5 or 6 mins. Allow to cool. When cold, join together in pairs with sweetened whipped Cream. Place in the refigerator, covered, for at least 3 hours to allow the centre to soften. When ready to serve, dust lightly with Icing Sugar.
