We've chosen these two gorgeous recipes from our collection because
they are very easy and you don't need to wait for the fruits
to be
in season to make them. Pineapple
JamThis different Jam is made using canned,
crushed pineapple. It's ever so delicious when used to fill sponge
cakes.
ingredients makes
3 x 500g jars 8 Cups canned crushed Pineapple 8 Cups
White Sugar 4 Tblspns Lemon Juice
method Heat the
Pineapple and lemon Juice in a large saucepan. Simmer gently uncovered
until it has reduced and thickened.
Take
off the heat and stir in the sugar until dissolved. Place back on the
heat and bring to the boil. Boil until setting point is reached (see
below) Leave to settle for a few minutes then stir. Pour into warm
sterilised jars and seal.
Dried
Apricot JamApricots are not available all year
round so this Jam is a gorgeous one to make at anytime.
ingredients 250 g
dried Apricots 4 Cups of Water 3 1/2 Cups of White
Sugar
method Soak
the Apricots overnight in the water. Place the water and Apricots in a
saucepan and simmer for approx. 15 minutes or until soft. Add the sugar
and stir to dissolve. Simmer for a further 1/2 hour then pour into
sterilised jars and seal.
To test the setting point of JamSpoon
a little Jam onto a cold saucer, as this makes it cool quickly. Push
the Jam slightly with your finger and it should crinkle.
